The Drummond Home will be closed Sunday, July 1st through Wednesday, July 4th, to observe the Independence Day holiday. We will resume normal working hours of operation Thursday, July 5th. The Drummond Home is located at 305 North price, Hominy, OK 74035. It’s Blackberry season and I have come across some wonderful and delicious recipes. This one is a keeper and one I think you will enjoy it.
Blackberries & Dumplings
½ cup of all purpose flour
¼ cup sugar divided
1 teas baking powder
¼ teas salt
¼ cup skim milk
2 cups of fresh blackberries
2/3 cup of water
1/8 teas of nutmeg
Combine flour, 2 Tablespoons of sugar, baking powder, salt; stir well. Stir in milk; set aside.
Combine blackberries, remaining sugar, and water in heavy Dutch oven or similar pot; stir well. Bring to boil. Drop about ¼ of the batter into the boiling water at a time; sprinkle with nutmeg.
Cover and cook over medium heat 10 to 12 minutes or until dumplings are done. YIELD: four servings
