I don’t like husband bashing. It really isn’t becoming. Now, do I enjoy telling or hearing a “funny husband tale?” You bet I do. Most of us can easily recognize the difference between simply sharing a funny incident or being bent on making their spouse the butt of a really bad joke. Frankly, the latter type of behavior makes me very uncomfortable and usually very annoyed. It is quite sad and most disrespectful when so little regard is shown for another person’s feelings.
I have a wonderful group of amazing friends, and like a lot of them, we happen to think our husbands deserve the title of HUSBAND OF THE YEAR. Among the girlfriends I visit with, I would have to say the competition runs pretty steep or practically neck and neck. However, I like to think my Honey is a gold medalist in the Better Half division and I don’t care how stiff the competition. He is almost as sweet as the following grilled pineapple recipe OR perhaps THE PINEAPPLE is almost as sweet as HE IS!
Lucky To Be In Love With Luscious Grilled Pineapple Spears
3 Tbsp. honey
1/2 of a fresh lemon
Ground black pepper
1 fresh pineapple
Slice, core, and peel a fresh pineapple into spears. In a small bowl, mix the honey, pepper and freshly squeezed lemon juice. Lightly whisk the “glaze” and brush the fresh spears with a generous amount of the honey mixture. Place pineapple on charcoal grill over med heat and grill approx 8 minutes on each side. Keep an eye on the pineapple. You don’t want to over grill it because the natural juices will dry up and then your pineapple will be tough. This is a super side dish for grilled pork chops, chicken, or fish.
